Ingredients

ripe avocadoes, halved and pitted

2 tsp. 

vegetable oil

3 tbsp. 

fresh lime juice

1/2 tsp. 

ground chipotle chilli salt

1/4 c. 

finely chopped red onion

1/4 c. 

fresh coriander, finely chopped

tortilla chips, for serving

 
Directions
  1. Heat grill to medium-high. Brush cut sides of avocados with oil. Grill just until slightly charred, 2 to 4 minutes.
  2. Transfer avocados to cutting board and cool slightly. Scoop avocado into a bowl and mash with lime juice, chipotle, and 1⁄2 tsp salt.
  3. Fold in red onion and cilantro. Serve with tortilla chips.
