Health and wellness personality Luke Hines has shared his favourite barbecue recipes in his vibrant cookbook Barbecue This! including these delicious Summer Salmon Skewers.
The cookbook contains more than 80 quick, vibrant and flavour-packed dishes by the ex-My Kitchen Rules star (pictured below) for weeknights, entertaining or any time.

Summer Salmon Skewers
Serves 4. Hands-on time: 15 minutes. Cook time: 10 minutes
2 tablespoons extra-virgin olive oil, plus extra to serve
2 garlic cloves, crushed
1 teaspoon dried chilli flakes
1 teaspoon smoked paprika
600g salmon fillets, deboned, skin off and cut into 4cm pieces
sea salt and freshly ground black pepper
8 metal skewers
3 tablespoons pistachios, toasted and finely chopped
SUMMER SALSA
2 mangoes, diced
1 bunch coriander, leaves picked and chopped
1 Lebanese cucumber, diced
10 cherry tomatoes, diced
Finely grated zest and juice of 1 lime
METHOD
1. Whisk the olive oil, garlic, chilli flakes and paprika in a large bowl.
2. Pat the salmon dry with a paper towel, and then add it to the bowl and use your fingers to coat with the marinade. Season well with salt and pepper.
3. Preheat the barbecue grill to medium. Thread the salmon onto the skewers and grill for 2–3 minutes each side or until golden brown on the outside and just cooked through in the middle. Transfer to a plate to rest for a few minutes.
4. For the summer salsa, gently toss all the ingredients in a large bowl. To serve, divide the salmon skewers and summer salsa among plates, scatter over the pistachios and drizzle over a little extra olive oil to finish.
