Ingredients
Crust
1 1/2 cups cauliflower rice
1 large egg
1/2 cup grated mozzarella
1/3 cup grated Parmesan
1 tsp dried basil
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp salt
Extra-virgin olive oil
Sauce
1 clove garlic, minced
1 tbsp fresh basil
1 tbsp tomato puree
2 tbsp extra-virgin olive oil
1/2 tsp dried fennel seeds
fresh parsley
Toppings
1/4 cup grated mozzarella
10 slices pepperoni
1/4 cup chopped fresh basil
1/4 cup grated Parmesan
Directions
1.Preheat the oven to 230°C.
2. In a large bowl, mix the cauliflower rice with the egg, mozzarella, Parmesan, basil, oregano, garlic powder, and salt.
3. Line a baking sheet with a nonstick spray or parchment paper. Press the cauliflower mixture evenly on the pan. Spray with some extra-virgin olive oil. Bake for 15 to 20 minutes, until the mixture begins to turn golden brown. Remove the baking sheet from the oven and set aside.
4. For the pizza sauce, mash the garlic and chop the basil. Place them in a small bowl and add the tomato puree, olive oil, fennel seeds, and parsley. Mix with a spoon. Spread the sauce evenly over the pizza crust. Top with grated mozzarella, pepperoni, basil, and Parmesan. Place in the oven and cook for an additional 10 minutes.
