450g green beans, trimmed

2 tbs olive oil

2 cloves garlic, sliced

1/2 cup pitted green olives, roughly chopped

1/3 cup feta, crumbled

2 tbs parsley, roughly chopped

  1. Fill a large straight-sided frying pan three-quarters of the way with water and bring to a boil over high heat.

  2. Add the green beans and cook about 3 minutes, until they are tender but still crisp. Drain the beans in a colander and then rinse under cold water. Set aside.

  3. Heat the olive oil and the garlic over a medium heat in the pan and cook for about 2 minutes, until the garlic is tender and fragrant.

  4. Add the olives and cook about 30 seconds, until heated through. Add the beans back into the pan and reheat, tossing with the olives, garlic and oil.

  5. Transfer to a serving platter or bowl, and top with the feta, parsley and season with salt and freshly ground black pepper.
