Cooking spray
2½ cups plain flour
1 teaspoon bicarbonate of soda
1 tablespoon cinnamon
1 teaspoon allspice
½ teaspoon salt
1 cup dark brown sugar
8 tablespoons unsalted butter, room temperature
3 large eggs
1 cup unsweetened apple sauce
2 teaspoon vanilla extract
4 cups peeled, chopped apples
1 cup icing sugar, sifted
1-2 tablespoons milk
1 teaspoon cinnamon


1. Heat oven to 180°C. Coat Bundt pan with cooking spray. Whisk together flour, bicarb, cinnamon, allspice and salt. In bowl of electric mixer, beat sugar and butter until light and fluffy, about 3 minutes. Beat in eggs, then apple sauce and vanilla. Beat in dry mixture. Fold in apples. 
2. Transfer mixture to pan and bake until wooden skewer inserted into centre comes out clean, about 35-45 minutes. Cool 15 minutes in pan, then turn out onto rack to cool completely. 
3. To make glaze, whisk together sugar, milk and cinnamon until smooth; drizzle over cake. Let glaze set before slicing to serve.
