Need a quick, easy lunch recipe that will actually fill you up? Food and fitness influencer Leah Itsines has created this Greek-inspired pasta salad that will give you the energy you need.

Ingredients
300g spiral pasta, uncooked
1 small red capsicum, diced
1 small yellow capsicum, diced
10 semi sun-dried tomatoes, diced
½ cup kalamata olives
½ red onion, diced
15 basil leaves, sliced
¼ cup marinated artichokes
¼ cup feta cheese, crumbled
125g can John West Salmon Slices, Smoked
Dressing
2 tbsp olive oil
2 tbsp rice wine vinegar
¼ tsp salt
2 x 85g cans John West Smoked Oysters in Oil (optional)

Method
- Cook pasta according to packet instructions. Leave to cool.
- Add cooked pasta and all other ingredients into a large mixing bowl and mix well. This is your base for the pasta salad. Here you can add any other ingredients that you like (for example, cherry tomatoes, fresh oregano etc).
- In a small blender, add all the dressing ingredients together and stir. Pour over salad and season to taste.
